One of my favorite things to cook during winter months… Chicken noodle soup! It’s super easy to make, very budget friendly, and freezes well!! Trifecta in my books 🙂
Recipe:
1 Whole Chicken (I buy the cut pieces vs whole)
1 package of Egg Noodles
3 slices of bacon or bacon fat (may sub with oil)
1 bag of Carrots- peel & slice
1 bag of Celery- cut
2 Medium Yellow Onions- dice
3 tsp Garlic- minced
3-6 Bay leaves depending on size
3 tbsp Parsley
3 tsp Sweet Basil
1-1/2 tsp Thyme
1 tsp Black Pepper
3 Tbsp Sea Salt
Directions:
1. In Dutch oven: Sauté bacon to render grease. Remove bacon. Sauté onions for a couple minutes. Add garlic. Add carrots & celery and sauté for a few more minutes.
2. In a deep pot, add 8 cups of water (or less) for broth. Add 1 tbsp sea salt. Add 1 breast, 1 chicken leg, inners, and thighs. Cover and bring to boil, simmer (boiling) for 1 hr.
3. Sauté onion in bacon fat for a couple mins. Add garlic and sauté for another couple mins. Add celery & carrots. Stir. Add 6-8 cups of water. Add remaining seasonings.
4. Add to soup: 1 breast, 1 chicken leg, 2 wings. Cover and bring to boil. Simmer (boiling) for 1 hr.
5. Remove chicken from both stock. Once a little cooled, shred meat from bone. Discard skin as well.
6. Remove bay leaves from Dutch oven and put them in secondary pot.
7. Add egg noodles to Dutch oven. Add stock from secondary pot if you need it.
8. Add in shredded chicken. Stir and serve once noodles are cooked.
* to freeze or refrigerate. Place soup immediately in containers and refrigerate. This stops the egg noodles from getting over cooked.
My little 10 month old loves this soup!
He’s eating solids like a bear out of hibernation, lol! But for this, I actually use my food blender (the magic bullet or baby bullet) and fill reusable food pouches (from weesprout) for easy on the go lunches & dinner for my Little B! He loves it!
